Another recipe from my apprenticeship class and one that garnered kudos from the profs. This is a holiday favorite of the family, as well....perfect for decorating. Great taste and texture.

Ingredients

  • 2 1/2 cups flour, sifted
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups applesauce
  • 3/4 cup veg. oil
  • 2 - eggs
  • 1/2 cup pecans, chopped
  • FROSTING
  • 1/2 cup butter - do not use margarine
  • 4 1/2 cups confectioners' sugar
  • 6-8 tablespoons apple juice

How To Make apple pecan layer cake

  • Step 1
    Heat oven to 350 degrees. Grease and flour two 9" cake pans.
  • Step 2
    Spoon flour into measuring cup; level off. In large bowl, combine flour, sugar, baking soda, baking powder, salt and cinnamon.
  • Step 3
    Add applesauce, oil and eggs; blend on low till moistened. Then beat 2 minutes on high.
  • Step 4
    Stir in pecans. Pour batter into prepared pans. Bake till toothpick or cake tester inserted comes out clean. Cool 10 minutes; then remove from pans.
  • Step 5
    FROSTING: Cool cake completely. In small heavy saucepan over medium heat, brown butter till light golden brown, stirring constantly.
  • Step 6
    Remove from heat; cool completely. In large bowl, combine browned butter, powdered sugar and 4 TBSP. of apple juice; blend on low till moistened.
  • Step 7
    Continue beating till well blended, adding additional apple juice until of spreading consistency. Fill and frost cake. Garnish with pecans, if desired. NOTE: Walnuts work just as well and give great flavor.
