apple pecan layer cake

Another recipe from my apprenticeship class and one that garnered kudos from the profs. This is a holiday favorite of the family, as well....perfect for decorating. Great taste and texture.

Ingredients
- 2 1/2 cups flour, sifted
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups applesauce
- 3/4 cup veg. oil
- 2 - eggs
- 1/2 cup pecans, chopped
- FROSTING
- 1/2 cup butter - do not use margarine
- 4 1/2 cups confectioners' sugar
- 6-8 tablespoons apple juice
How To Make apple pecan layer cake

Step 1Heat oven to 350 degrees. Grease and flour two 9" cake pans.

Step 2Spoon flour into measuring cup; level off. In large bowl, combine flour, sugar, baking soda, baking powder, salt and cinnamon.

Step 3Add applesauce, oil and eggs; blend on low till moistened. Then beat 2 minutes on high.

Step 4Stir in pecans. Pour batter into prepared pans. Bake till toothpick or cake tester inserted comes out clean. Cool 10 minutes; then remove from pans.

Step 5FROSTING: Cool cake completely. In small heavy saucepan over medium heat, brown butter till light golden brown, stirring constantly.

Step 6Remove from heat; cool completely. In large bowl, combine browned butter, powdered sugar and 4 TBSP. of apple juice; blend on low till moistened.

Step 7Continue beating till well blended, adding additional apple juice until of spreading consistency. Fill and frost cake. Garnish with pecans, if desired. NOTE: Walnuts work just as well and give great flavor.
