apple pecan cake
This is a quick recipe to throw together. The longest part is chopping the apples, and of course waiting on it to bake! But it’s so worth it. Not really a sweet cake. It pairs well with a nice cup of coffee or hot tea. Great hot out of the oven. Wrap one up and freeze it for later or gift one to your neighbor!

Ingredients For apple pecan cake

2 csugar

2 tspvanilla

1 coil
-
1 cchopped pecans
-
2eggs
-
dash of salt
-
3 ca/p flour
-
3 cfinely chopped honeycrisp apples

1 tspbaking soda

water if needed, up to 1/2 cup
How To Make apple pecan cake

1Preheat oven to 325. Grease and flour two 9x5 loaf pans

2Combine sugar, oil, eggs, vanilla, salt & baking soda. Mix well.

3Add pecans and apples to this mixture. Mix well.

4Gradually add flour to this mixture. If it is too dry you can add water at this point a little at a time, until it’s come to a consistency that you can stir it easier. I have used peach juice from my canned peaches instead of water.

5Pour mixture into your prepared loaf pans evenly.

6Bake at 325 for 45 minutes. Hope y’all enjoy!!
