apple pecan cake
This is a quick recipe to throw together. The longest part is chopping the apples, and of course waiting on it to bake! But it’s so worth it. Another nice thing about this is that it’s all stirring by hand, no machines to wash. It’s not really a sweet cake so It pairs well with a nice cup of coffee or hot tea. Great hot out of the oven or wrap one up and freeze it for later or gift one to your neighbor!

Ingredients
- 2 cups sugar
- 2 teaspoons vanilla extract
- 1 cup oil
- 1 cup chopped pecans
- 2 large eggs
- 1 dash salt
- 3 cups all-purpose flour
- 3 cups finely chopped honeycrisp apples
- 1 teaspoon baking soda
- water if needed, up to 1/2 cup
- cinnamon, to taste (optional)
- nutmeg, to taste (optional)
How To Make apple pecan cake

Step 1Preheat oven to 325. Grease and flour two 9x5 loaf pans

Step 2Combine sugar, oil, eggs, vanilla, salt & baking soda. Mix well.

Step 3Add pecans and apples to this mixture. Mix well.

Step 4Gradually add flour to this mixture. If it is too dry you can add water at this point a little at a time, until it’s come to a consistency that you can stir it easier. I have used peach juice from my canned peaches instead of water.

Step 5Pour mixture into your prepared loaf pans evenly.

Step 6Bake at 325 for 45 minutes. Hope y’all enjoy!!
