I haven't made these in a couple of years but will make them this year to share with friends. They are very moist and delicious muffins. I can't remember where the recipe came from but I'm thinking possibly from a friend because it's on a recipe card.

Ingredients

  • 1 1/2 c
    all purpose flour
  • 3/4 tsp
    salt
  • 3 tsp
    baking powder
  • 3/4 c
    sugar
  • 1 1/2 tsp
    cinnamon
  • 3 tsp
    vanilla extract
  • 3 Tbsp
    melted butter or margarine
  • 6 Tbsp
    milk
  • 1 1/2 c
    chopped apples
  • 3
    eggs, slightly beaten
  • 6 Tbsp
    chopped nuts

How to Make Apple Nut Muffins

Step-by-Step

  1. Preheat oven to 350. Sift together the first 5 (dry) ingredients. Now add the vanilla, butter, milk and apples. Now add in the eggs then the nuts.
  2. Fill well greased muffin pans or muffin pans lined w/baking cups, 2/3 full and bake at 350 for 40-50 minutes. Test for doneness by inserting a toothpick.
