apple n pear butter spice cake
This is one of my favorite cakes and the caramel glaze is perfect for it. Enjoy!

Ingredients
- FOR CAKE:
- 1/2 cup butter, softened
- 1 cup dark brown sugar, packed
- 1 - egg
- 1 cup raisins
- 1 cup pecans, chopped
- 1 3/4 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon ground cloves
- 1 teaspoon freshly ground cinnamon
- 1/2 teaspoon freshly grated nutmeg
- 1 cup apple n pear butter
- FOR CARAMEL GLAZE:
- 6 tablespoons butter
- 2/3 cup brown sugar
- 1/2 cup whipping cream
- - "just a pinch" of salt
How To Make apple n pear butter spice cake

Step 1Preheat oven to 350 degrees. Prepare your baking pan with butter and then flour. This cake will make a 9" tube cake or 13x9 pan.

Step 2Cream butter and sugar until fluffy about 5 minutes. Add egg and mix until combined.

Step 3In a separate bowl combine raisins and pecans. Toss in 2 tablespoons flour until coated.

Step 4In another bowl combine the rest of the flour, salt, baking soda, cloves, cinnamon, and nutmeg.

Step 5Slowly add flour mixture to butter mixture and mix until combined. Add apple n pear butter until well combined. Stir in raisin mixture.

Step 6Pour batter into prepared pan and bake 35 minutes or until toothpick comes out clean.

Step 7For glaze: Melt butter in a medium skillet. Add sugar, whipping cream, and salt. Cook and stir on medium-low heat until blended about 2 minutes. Increase heat until boiling with small air bubbles covering surface. Remove from heat and cool until thickened. Spoon over cake.
