I got a lot of compliments on this cake, I think everyone will love it. One of the nicest things about baking it is that it smells sooooo good and the scent lingers in the house all day! It is really a great cake and very very moist!!

Ingredients
- 1 1/2 cups canola oil (or regular)
- 2 cups sugar
- 2 - eggs
- 3 cups flour
- 4 large apples, peeled and diced (i used grannysmith)
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup pecans, chopped or walnuts
- 1 cup raisins (optional)
- - powdered sugar
How To Make apple-licious autumn cake

Step 1Cream sugar, oil and eggs. Add seasonings, soda and vanilla. Add flour gradually, fold in apples, nuts and raisins.

Step 2Bake at 300 degrees for 1 hour or until toothpick inserted comes out clean. I just sprinkle with powdered sugar when cool.
