apple crumb sugar cake

I tried this where I work and everyone enjoyed it and were looking for the leftovers.... which i froze for another day.. I doubled it for a 9 by 13 pan

Ingredients
- 2 cups tart siced apples
- 2 cups sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/2 teaspoon allspice, ground
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 2 cups flour (i use unbleached)
- 2 teaspoons baking powder
- 1/2 cup butter
- 2 medium eggs, separated
- 1/2 cup milk
How To Make apple crumb sugar cake

Step 1Mix sliced apples,1 cup sugar, spices and lemon juice; set aside.

Step 2sift together remaining sugar, salt, flour and baking powder; add butter. Mix thoroughly using a fork; reserve 1 cup butter mixture.

Step 3stir in well-beaten egg yolks and milk to remaining butter mixtrue. Fold in beaten egg whites; mix thoroughly. Pour int well-greased 9 by 9 baking pan. Drain apple mixture; spread on top of batter. Cover with reserved butter mixture. Bake at 400 degrees for 45 minutes. When done, sprinkle additional cinnamon over to of cake (i don't do this )
