I tried this where I work and everyone enjoyed it and were looking for the leftovers.... which i froze for another day.. I doubled it for a 9 by 13 pan

Ingredients For apple crumb sugar cake

  • 2 c
    tart siced apples
  • 2 c
    sugar
  • 1 tsp
    cinnamon
  • 1/4 tsp
    ginger
  • 1/2 tsp
    allspice, ground
  • 1 Tbsp
    lemon juice
  • 1/4 tsp
    salt
  • 2 c
    flour (i use unbleached)
  • 2 tsp
    baking powder
  • 1/2 c
    butter
  • 2 md
    eggs, separated
  • 1/2 c
    milk

How To Make apple crumb sugar cake

    Mix sliced apples,1 cup sugar, spices and lemon juice; set aside.

    sift together remaining sugar, salt, flour and baking powder; add butter. Mix thoroughly using a fork; reserve 1 cup butter mixture.

    stir in well-beaten egg yolks and milk to remaining butter mixtrue. Fold in beaten egg whites; mix thoroughly. Pour int well-greased 9 by 9 baking pan. Drain apple mixture; spread on top of batter. Cover with reserved butter mixture. Bake at 400 degrees for 45 minutes. When done, sprinkle additional cinnamon over to of cake (i don't do this )
