- 5 - eggs. separated
- 5 - apples, golden delicious, peeled & grated
- 2 cups sugar
- 3 cups flour
- 1 1/2 cups olive oil
- 1 tablespoon baking powder
- 1 1/2 teaspoons cinnamon
How To Make apple coffee cake

Step 1Preheat oven 390. In a large bowl, combine the oil and cinnamon. Add egg yolks, flour, baking powder, sugar and grated apples. Stir well to combine. Beat the egg whites to a light froth and stir into the mixture carefully.

Step 2Bake in a lightly oiled 11 1/2" round pound for 45 minutes, or until a knife inserted into the center comes out clean.

Step 3If the top of the cake browns too quickly, cover with foil until the cake is done.
