I got this recipe from an old Better Homes and Gardens cookbook, but it was very bland so I tweaked it a little to make it taste better

Ingredients
- 4 cups chopped apples
- 1 cup water
- 2 tablespoons lemon juice
- 1 1/4 cups sugar
- 1/3 cup cornstarch
- 1 tablespoon cinnamon
- 3 cups flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 cup butter
- 2 - eggs, slightly beaten
- 1 cup milk
- 1 teaspoon vanilla
- 1/2 cup sugar
- 1/2 cup flour
- 1 tablespoon cinnamon
- 1/4 cup butter
How To Make apple coffee cake

Step 1In saucepan, combine apples and water. Simmer, covered about 5 minutes. Stir in lemon juice

Step 2Mix the 1 1/4 cups sugar, cornstarch, and 1 TBSP cinnamon. Stir into apple mixture. Cook and stir until thick and bubbly. Let cool.

Step 3In mixing bowl stir together the flour, 1 cup sugar, baking powder, salt, 2 tsp cinnamon and nutmeg. Cut in 1 cup butter until mixture resembles fine crumbs.

Step 4Combine the eggs, milk and vanilla, and add to the flour mixture, mixing until blended.

Step 5Spread 1/2 of the batter into a 13X9 greased baking dish. Spread cooled apple mixture over the batter. Spoon remaining batter in small mounds over the apple mixture, spreading out as much as possible.

Step 6Combine the 1/2 cup sugar, 1/2 cup flour and 1 TBSP cinnamon. Cut in 1/4 cup butter until mixture resembles coarse crumbs. Sprinkle mixture over batter in baking pan. Bake in a 350 degree oven for 45-50 minutes
