This is a great recipe to make with all those apples that you picked in the fall! My family loves this cake warmed up with ice cream on the side.

Ingredients

  • 2 large or 4 small baking apples - peeled, cored and chopped small
  • 1 1/2 cups all purpose flour
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1/4 cup butter - melted and cooled
  • 3/4 cup half and half or milk
  • 1 large egg, beaten
  • TOPPING:
  • 1/4 cup light brown sugar - packed
  • 2 teaspoons cinnamon
  • 1/2 cup chopped walnuts or pecans

How To Make apple cinnamon coffee cake

  • Step 1
    Preheat oven to 350 degrees Fahrenheit.
  • Step 2
    Grease an 8x8 pan with cooking spray.
  • Step 3
    In mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.
  • Step 4
    In another bowl, mix together the melted butter, egg, vanilla and milk or half-n-half.
  • Step 5
    Combine the wet and dry ingredients gently, being careful to not over mix. The batter should be slightly lumpy. Add in the chopped apples.
  • Step 6
    Combine the nuts, brown sugar and cinnamon. Spread over the top of the batter.
  • Step 7
    Bake for about 50 minutes, or until toothpick inserted in center comes out clean. This is delicious served warm and with ice cream. Cover and store remaining cake in fridge.
