Apple Cinnamon Coffee Cake

Ingredients

2 largeor 4 small baking apples - peeled, cored and chopped small

1 1/2 call purpose flour

1 csugar
-
1/4 tspsalt
-
1 tspbaking powder
-
1/2 tspcinnamon
-
1/2 tspvanilla
-
1/4 cbutter - melted and cooled

3/4 chalf and half or milk
-
1 largeegg, beaten
-
TOPPING:
-
1/4 clight brown sugar - packed
-
2 tspcinnamon
-
1/2 cchopped walnuts or pecans
How to Make Apple Cinnamon Coffee Cake
- Preheat oven to 350 degrees Fahrenheit.
- Grease an 8x8 pan with cooking spray.
- In mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.
- In another bowl, mix together the melted butter, egg, vanilla and milk or half-n-half.
- Combine the wet and dry ingredients gently, being careful to not over mix. The batter should be slightly lumpy. Add in the chopped apples.
- Combine the nuts, brown sugar and cinnamon. Spread over the top of the batter.
- Bake for about 50 minutes, or until toothpick inserted in center comes out clean. This is delicious served warm and with ice cream. Cover and store remaining cake in fridge.
