apple cinnamon coffee cake
This is a great recipe to make with all those apples that you picked in the fall! My family loves this cake warmed up with ice cream on the side.

Ingredients
- 2 large or 4 small baking apples - peeled, cored and chopped small
- 1 1/2 cups all purpose flour
- 1 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1/4 cup butter - melted and cooled
- 3/4 cup half and half or milk
- 1 large egg, beaten
- TOPPING:
- 1/4 cup light brown sugar - packed
- 2 teaspoons cinnamon
- 1/2 cup chopped walnuts or pecans

Step 1Preheat oven to 350 degrees Fahrenheit.

Step 2Grease an 8x8 pan with cooking spray.

Step 3In mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.

Step 4In another bowl, mix together the melted butter, egg, vanilla and milk or half-n-half.

Step 5Combine the wet and dry ingredients gently, being careful to not over mix. The batter should be slightly lumpy. Add in the chopped apples.

Step 6Combine the nuts, brown sugar and cinnamon. Spread over the top of the batter.

Step 7Bake for about 50 minutes, or until toothpick inserted in center comes out clean. This is delicious served warm and with ice cream. Cover and store remaining cake in fridge.
