Ingredients

  • 2 Tbsp
    cinnamon
  • 5 Tbsp
    brown sugar
  • 5 c
    apples, granny smith
  • 2 Tbsp
    lemon juice
  • CAKE INGREDIENTS

  • 2 c
    sugar
  • 1 c
    oil
  • 4 tsp
    vanilla extract
  • 1/2 c
    orange juice
  • pinch
    salt
  • 4
    eggs, lightly beaten
  • 3 c
    all purpose flour
  • 1 Tbsp
    baking powder
  • 1 tsp
    nutmeg

How to Make Apple Cinnamon Coffee Cake

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Grease a 13 x 9 pan or a 12-cup tube or bundt pan with cooking spray.
  3. Peel and core all apples. Take two apples and slice thinly. Chop remaining apples up into small pieces. Toss with lemon juice to prevent browning.
  4. Combine cinnamon and brown sugar and set aside 1 tablespoon; toss prepared apples with remainder and set aside.
  5. For the cake, whisk together sugar, oil, vanilla, orange juice and eggs.
  6. Combine flour, baking powder and nutmeg and fold into sugar mixture.
  7. Line bottom of pan with apple slices. Spoon a little more than one third of the batter into prepared pan; cover with half of apple mixture, then spoon in remaining batter and apple mixture.
  8. Sprinkle top lightly with the reserved cinnamon-sugar.
  9. Bake in preheated oven for 45 minutes (1 hours for bundt) or until done.
  10. Loosen sides with a butter knife, then invert cake onto a plate for serving.
  11. NOTE: May lower fat in recipe by replacing oil with applesauce.
