A classic Apple Cake recipe that I adapted to make my own. If it is not apple season, and cider is not available use milk to make the glaze.

Ingredients
- 3 cups flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon, ground
- 1/4 teaspoon ginger powder
- 1 1/2 cups canola oil
- 2 cups sugar
- 3 large eggs, at room temperature
- 2 teaspoons vanilla
- 1 teaspoon lemon juice
- 3 medium apples, peeled and thinly sliced
- 1/2 cup walnuts, chopped and toasted
- GLAZE
- 1 cup confectioners' sugar
- 1 tablespoon apple cider
How To Make apple cake

Step 1Preheat oven to 350 degrees.

Step 2Toast walnuts on sheet pan in oven for 7-10 minutes.

Step 3Line 13x9" baking pan with parchment paper. Spray parchment with cooking spray.

Step 4Whisk flour, baking soda, cinnamon and ginger.

Step 5Beat oil, sugar and eggs until pale and slightly thick.

Step 6Beat in vanilla and lemon juice.

Step 7Add dry ingredients and mix until combined.

Step 8Fold in walnuts and apples.

Step 9Transfer to prepared pan.

Step 10Bake 35-40 minutes.

Step 11Cool in pan.

Step 12Prepare glaze: Mix confectioners sugar and apple cider until smooth. Drizzle on cake, when cooled.
