apple cake
A classic Apple Cake recipe that I adapted to make my own. If it is not apple season, and cider is not available use milk to make the glaze.

Ingredients For apple cake

3 cflour

1 tspbaking soda

2 tspcinnamon, ground

1/4 tspginger powder

1 1/2 ccanola oil
-
2 csugar
-
3 lgeggs, at room temperature

2 tspvanilla

1 tsplemon juice
-
3 mdapples, peeled and thinly sliced

1/2 cwalnuts, chopped and toasted
- GLAZE

1 cconfectioners' sugar

1 Tbspapple cider
How To Make apple cake

1Preheat oven to 350 degrees.

2Toast walnuts on sheet pan in oven for 7-10 minutes.

3Line 13x9" baking pan with parchment paper. Spray parchment with cooking spray.

4Whisk flour, baking soda, cinnamon and ginger.

5Beat oil, sugar and eggs until pale and slightly thick.

6Beat in vanilla and lemon juice.

7Add dry ingredients and mix until combined.

8Fold in walnuts and apples.

9Transfer to prepared pan.

10Bake 35-40 minutes.

11Cool in pan.

12Prepare glaze: Mix confectioners sugar and apple cider until smooth. Drizzle on cake, when cooled.
