apple cake
I had ordered apples from a local organic store and they sent me huge ones. So I had to use them up as they are too big for eating so found a recipe of my mom's and tweaked it adding more juice and I sprinkle sugar on top for a crunch.

Ingredients
- APPLES
- 5-6 medium apples
- 5 tablespoons sugar
- 1 tablespoon cinnamon
- CAKE
- 2 3/4 cups ap flour sifted
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 cups sugar
- 1 cup vegetable oil
- 1/3 cup orange jiuce
- 2 teaspoons vanilla extract
- 4 large eggs
How To Make apple cake

Step 1Preheat oven to 350. Grease and flour 10 inch tube pan or Bundt pan

Step 2Apples: peel and chop the apples into cubes. Should be about 2 pounds, toss with the 5 tablespoons of sugar and 1 tablespoon of cinnamon. This can be done after you sift your flour and gather your wet ingredients. The longer it sits the more liquid it makes.

Step 3In a large bowl whisk together the flour, baking powder and salt.

Step 4In a medium bowl whisk together the sugar, oil, orange juice and vanilla. Add the wet to the dry ingredients. I use a wooden spoon.

Step 5Add eggs one at a time beating to fully incorporate into the batter.

Step 6Add a thin layer of batter on bottom of pan, add 1/4 apples and try to leave the liquid in the bowl. Drizzle the batter over the apples, it won't cover them but the batter will spread when baking. Do this 3 times and end with a layer of batter.

Step 7Bake for 1 and 1/2 hours (mine went 1 hr.) or until when tested comes out dry. Cool before removing from pan.
