I had got this recipe from an old classmates mother when I was in 8th grade many moons ago. She was such a lovely woman. I think of her often when I make this. This cake is so moist that you don't have to frost.

Ingredients
- 2 - eggs
- 2 cups sugar
- 1 teaspoon vanilla extract
- 2 cups flour
- 2 teaspoons baking soda
- 1/8 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 cup oil
- 1 cup chopped, walnuts
- 6 cups apples, peeled and chopped
- CREAM CHEESE FROSTING
- 1 1/2 cans powdered sugar
- 6 ounces cream cheese, softened
- 3 tablespoons butter
- 1/2 teaspoon vanilla extract
- 1 pinch salt
How To Make apple cake

Step 1Beat eggs; add sugar and cdeam well. Add vanilla.

Step 2Sift together flour, baking soda, salt and cinnamon. Add alternately, with flour.

Step 3Stir in apples and nuts. Pour mixture into 15x9x21/2 inch pan which has been greased and floured. Bake 1 hour in a 350 degrees oven. Cool before frosting.

Step 4Frosting: Cream together all of the frosting ingredients. Frost cake and top with finely chopped walnut, if you like.
