I had got this recipe from an old classmates mother when I was in 8th grade many moons ago. She was such a lovely woman. I think of her often when I make this. This cake is so moist that you don't have to frost.

Ingredients

  • 2 - eggs
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/8 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup oil
  • 1 cup chopped, walnuts
  • 6 cups apples, peeled and chopped
  • CREAM CHEESE FROSTING
  • 1 1/2 cans powdered sugar
  • 6 ounces cream cheese, softened
  • 3 tablespoons butter
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

How To Make apple cake

  • Step 1
    Beat eggs; add sugar and cdeam well. Add vanilla.
  • Step 2
    Sift together flour, baking soda, salt and cinnamon. Add alternately, with flour.
  • Step 3
    Stir in apples and nuts. Pour mixture into 15x9x21/2 inch pan which has been greased and floured. Bake 1 hour in a 350 degrees oven. Cool before frosting.
  • Step 4
    Frosting: Cream together all of the frosting ingredients. Frost cake and top with finely chopped walnut, if you like.
