Many years ago, my mother-in-law shared this recipe with me. She was a wonderful Italian lady who could cook circles around anyone. Although this is not an Italian recipe, it is so easy to make and so, so good. The cake batter is very thick and the apples just seem to melt into the other ingredients as it cooks. After a big meal, this is the perfect dessert with a cup of coffee. I have even been know to nibble on it for breakfast. I hope you all enjoy it as much as I do. This can be served warm or at room temp.

Ingredients

  • 4 cups raw apples (green-pippin)
  • 2 cups sugar
  • 2 - eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup vegetable oil
  • 2 cups all purpose flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup nuts, chopped (pecan or walnut)

How To Make apple cake

  • Step 1
    Preheat oven to 350
  • Step 2
    In a large mixing bowl, mix together, sugar, eggs, vanilla extract, oil, flour, cinnamon, baking soda and salt.
  • Step 3
    Add bite-size apple pieces and gently mix into batter.
  • Step 4
    Mix in chopped nuts
  • Step 5
    Scrap (batter will be to thick to pour) into a 9"x13" greased and floured pan.
