This cake is incredibly moist and delicious, even a few days later if it is kept well covered! Feel free to add nuts or if it is too sweet remove some of the sugar! I do everything by hand including the mixing. However, this is a pretty thick batter so if you have a mixer it will help incorporate all the ingredients quickly,

Ingredients
- FOR THE CHOPPED APPLES
- 6 medium apples, mcintosh (or whatever kind you enjoy) peeled, cored and roughly chopped
- 1 tablespoon cinnamon
- 1/2 tablespoon nutmeg
- 2 tablespoons white sugar
- 3 tablespoons brown sugar
- 1/2 medium lemon juice, fresh
- FOR THE CAKE
- 2 3/4 cups sifted flour
- 1 tablespoon baking powder
- 1 cup vegetable oil
- 1 cup white sugar
- 3/4 cup brown sugar
- 1/4 cup orange juice, fresh
- 2 1/2 teaspoons vanilla extract
- 4 large eggs
How To Make apple cake

Step 1Pre heat oven to 350 degrees. Grease a tube cake pan (very very well), or whatever type of pan you would like to use. Keep in mind, this is a very large and dense cake and needs room to expand without spilling over! You need 3 bowls, one large and two medium sized.

Step 2First, peel core and chop the apples and toss them with the cinnamon, sugar and lemon juice in one of the medium sized bowls. Place these aside until later.

Step 3Mix together the flour, and baking powder in the large mixing bowl. In the other medium sized bowl wisk together oil, orange juice, sugar and vanilla.

Step 4Slowly begin to combine the wet ingredients into the dry ingredients. After these are combined being to mix in the eggs one at a time. It is important to keep scraping down the sides of the bowl to make sure that all ingredients are mixed together very well.

Step 5There are two ways to finish this recipe and put it into the oven. I like to mix the apples into the batter after it is completed. However, some websites I have seen that make a cake similar to this like to layer the apples. It is up to your personal taste! Whatever you choose, is going to be fantastic.

Step 6Stick the cake into the 350 degree oven for about 1 and a 1/2 hours, or until a cake tester comes out clean!
