I took a trip to Ireland November 2011. I picked up this cookbook called A taste of Killarney, compiled by Jane Bergin. This recipe is from Old Weir Lodge, chef Maureen O'Donoghue.

Ingredients

  • 2 cups self rising flour
  • 1/2 cup caster sugar
  • 1/2 cup butter
  • 1 pound cooking apples
  • 2 - eggs
  • pinch salt
  • 2 tablespoons granulated sugar

How To Make apple cake

  • Step 1
    Preheat oven to 400F
  • Step 2
    Cream together caster sugar and butter until light and fluffy. Add the beaten egg.
  • Step 3
    Mix in the flour, salt and diced cooking apples.
  • Step 4
    Pour mixture into an 8 inch cake tin and sprinkle the top with granulated sugar. Place in the middle shelf of the oven. Bake for 40 minutes. The cover with foil and bake a further 10 minutes.
