I took a trip to Ireland November 2011. I picked up this cookbook called A taste of Killarney, compiled by Jane Bergin. This recipe is from Old Weir Lodge, chef Maureen O'Donoghue.

Ingredients

2 c
self rising flour
1/2 c
caster sugar
1/2 c
butter
1 lb
cooking apples
2
eggs
pinch
salt
2 Tbsp
granulated sugar

How to Make Apple Cake

Step-by-Step

  • 1Preheat oven to 400F
  • 2Cream together caster sugar and butter until light and fluffy. Add the beaten egg.
  • 3Mix in the flour, salt and diced cooking apples.
  • 4Pour mixture into an 8 inch cake tin and sprinkle the top with granulated sugar. Place in the middle shelf of the oven. Bake for 40 minutes. The cover with foil and bake a further 10 minutes.
