I took a trip to Ireland November 2011. I picked up this cookbook called A taste of Killarney, compiled by Jane Bergin. This recipe is from Old Weir Lodge, chef Maureen O'Donoghue.

Ingredients
- 2 cups self rising flour
- 1/2 cup caster sugar
- 1/2 cup butter
- 1 pound cooking apples
- 2 - eggs
- pinch salt
- 2 tablespoons granulated sugar
How To Make apple cake

Step 1Preheat oven to 400F

Step 2Cream together caster sugar and butter until light and fluffy. Add the beaten egg.

Step 3Mix in the flour, salt and diced cooking apples.

Step 4Pour mixture into an 8 inch cake tin and sprinkle the top with granulated sugar. Place in the middle shelf of the oven. Bake for 40 minutes. The cover with foil and bake a further 10 minutes.
