karen's apple cake

This is the first recipe I'm sharing with all of you. It is Tried and True for sure. I'v given this cake to many people as a gift and they all ask for the recipe. I found this recipe in a novel called "Promises To Keep" by Karen Harper. There was a recipe at the start of each chapter. It was good story but an even better cook book. This cakes is sweet, moist and good for dessert or as a breakfast cake. Enjoy

Ingredients

  • 2 1/4 cups all purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 - eggs
  • 2 cups sugar
  • 1 1/2 cups vegetable oil
  • 3 cups pared chopped apples
  • 2 teaspoons vanilla extract
  • 1 cup chopped walnuts

How To Make karen's apple cake

  • Step 1
    Prepare Tube Pan (I use a Bunt Pan) by greasing and flouring.
  • Step 2
    Heat oven to 350 degrees.
  • Step 3
    Sift dry ingredients of four, cinnamon, baking soda and salt
  • Step 4
    In a separate bowl beat the eggs and then add the sugar and oil. Beat until light
  • Step 5
    add sifted ingredients to the wet ingredients a third at a time until incorporated. It will be very thick (almost like cookie dough)
  • Step 6
    Add the apples and walnuts and vanilla
  • Step 7
    Pour into the pan and bake for 1 hour and 15 min. check for doneness after one hour by inserting knife in center. If it comes out clean it's done. Oven's vary. Mine was done in 1 hour 15 min.
  • Step 8
    If you wish, make a glaze to dribble on top by combining 1 cup packed brown sugar, 1/4 milk , and 1/2 cup butter. Combine in a sauce pan and, stirring, let boil 2 to 3 min. Beat to desired thickness and pour over the cake. I just beat it with a wire wisk and let it cool a little before I pour it over the cake. It's good without it too.
