apple cake
This recipe was given to me by a gypsy woman years ago. Its a very good cake and stays moist as long as the cake survives, which is not very long.

Ingredients
- 1/2 cup butter, softened
- 2 cups sugar
- 2 large eggs
- 6 medium apples,finely chopped
- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon, ground
- 1 teaspoon nutmeg
- 1 cup chopped walnuts
- ICING
- 3 ounces cream cheese, room temperature
- 1/2 stick butter,softened
- 1 box powdered sugar
- 1/4 cup milk

Step 1Cream butter and sugar very light and fluffy, Beat eggs in one at a time[very well]. Stir in apples. Sift together flour, baking soda, salt, cinnamon, and nutmegStir flour mixture, nuts, and apples mixture together. Bake 45 minutes in a 13x9 pan in a 350 degree oven.

Step 2ICING---Take 3 oz cream cheese and cream with butter. Add powdered sugar and milk til Icing is stiff.

Step 3ICING Variation;--Beat together 2 tablespoon butter, 1 cup sifted powdered sugar, 1/2 teaspoon vanilla. Add 1---2 tablespoon apple juice beating til spreading consistency.
