I saved this recipe about a year ago, from Allrecipes. I never got around to trying it or sharing it. So, I didn't want another year to go by, without doing so.

Ingredients
- ********TOPPING********
- 1 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup chopped pecans
- ********CAKE********
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup white sugar
- 3/4 cup apple butter
- 1 teaspoon vanilla extract
- 1/2 cup whole bran cereal or wheat germ
- 1 cup sour cream
- 2 large eggs, beaten
How To Make apple butter spice cake

Step 1Preheat oven to 350°F. Spray or grease a 9x13 inch cake pan. Prepare topping mix, by combining those ingredients, and set aside.

Step 2Sift together first 4 "cake" ingredients, in a medium bowl. In another bowl, blend together butter and sugar; add eggs, and beat well. Add apple butter, vanilla, whole bran cereal or wheat germ.

Step 3Add sifted dry ingredients, alternately, with sour cream, to egg mixture; mix well, after each addition.

Step 4Pour half of batter, into pan, sprinkle half of topping over top. Pour remaining batter, and top with remaining topping.

Step 5Bake for 40 minutes or test with wooden pick, in center, for doneness. Makes 18 servings. Nutrition: One serving 266 cal, 10.7 g fat (5.3 g sat), 43 mg chol, 224 mg sod, 88 mg potassium, 40.6 g carb, 1.1 g fiber, 3 g protein, 27.5 sugars.
