apple butter loaf

I'm pretty sure that this recipe came from my friend's Mom. I love making sweet breads and bake often. Whenever we are invited to someone's home I bring one with me. My friend's Mom made the apple butter herself but I use a good, jarred apple butter that I get at the Farmer's Market. There is a lot of "down time" so prep is spread out. Not the easiest recipe but well worth the effort.

Ingredients
- 1/2 cup raisins
- 1/3 cup apple butter
- 1/4 cup chopped walnuts
- 3 cups flour ( recipe says 3 - 3 1/2 cups)
- 1 package yeast
- 1 cup milk
- 1/4 cup molasses
- 1/4 cup butter
- 1/2 teaspoon salt
- 1 -2 tablespoon milk
- 1 cup confectioners' sugar
- - additional chopped walnuts
How To Make apple butter loaf

Step 1Combine raisins, apple butter and 1/4 cup chopped walnuts. Set aside.

Step 2In a large bowl combine 1 1/2 cups of flour and yeast.

Step 3Cook and stir milk, molasses, butter and 1/2 tsp of salt until just warm.

Step 4Add to flour mixture slowly. Beat on low for 1/2 minute and then beat on high for 3 minutes. When you can no longer beat, remove from bowl and place on floured board.

Step 5Add as much flour as you are able and then knead to make a moderately stiff dough (6-8 minutes)

Step 6Shape into a ball. Place into a greased, glass loaf pan. Cover and chill for 3 hours.

Step 7Remove from refrigerator and let dough come to room temperature. Punch down.

Step 8Let rest, covered, for 10 minutes.

Step 9Roll dough into a rectangle and spread on raisin mixture.

Step 10Roll up and seal edges. Put in pan seam side down and turn ends under.

Step 11Heat oven to 375 degrees. Cover loaf pan with paper towel. While oven is heating put loaf into microwave for 10 minutes on 10% power to rise.

Step 12Place 1 1/2 cup of boiling water into the back of the oven.

Step 13Bake loaf, uncovered, for 20 minutes.

Step 14Cover loaf with tin foil and continue baking for another 35 minutes.

Step 15Mix together confectioners sugar, chopped walnuts (amount of chopped nuts is up to you) and milk to make glaze while loaf bakes.

Step 16Remove from oven and place on wire rack. Once cool remove from loaf pan

Step 17Spread glaze on cool loaf.
