Ingredients
- 1 package butter pecan cake mix
- 3/4 cup white sugar
- 1/2 cup vegetable oil
- 1 cup pureed pumpkin
- 1/4 cup water
- 1 teaspoon ground cinnamon
- 4 large eggs
- pillsbury buttercream frosting

Step 1Preheat oven to 350° F. Line muffin pan with 24 paper liners or spray with nonstick cooking spray. Also prepare an 8x8" pan with cooking spray.

Step 2Combine all ingredients except frosting and beat until smooth. Scoop about 1/3 cup batter into each muffin cup.

Step 3Bake for 20 minutes or until toothpick comes out clean when inserted in the cupcakes.

Step 4Allow to cool before frosting. Using a pastry bag to frost cupcakes is the easiest.

Step 5Makes about 24 large cupcakes plus an 8x8" brownie pan. You can also make mini cupcakes, which need to bake about 15 minutes.
