This is my daughter's recipe which she asked me to post. These are very good, rich, and moist.

  • 1 pkg
    butter pecan cake mix
  • 3/4 c
    white sugar
  • 1/2 c
    vegetable oil
  • 1 c
    pureed pumpkin
  • 1/4 c
    water
  • 1 tsp
    ground cinnamon
  • 4 lg
    eggs
  • pillsbury buttercream frosting

How To Make anita's perfect pumpkin cupcakes for dummies

    Preheat oven to 350° F. Line muffin pan with 24 paper liners or spray with nonstick cooking spray. Also prepare an 8x8" pan with cooking spray.

    Combine all ingredients except frosting and beat until smooth. Scoop about 1/3 cup batter into each muffin cup.

    Bake for 20 minutes or until toothpick comes out clean when inserted in the cupcakes.

    Allow to cool before frosting. Using a pastry bag to frost cupcakes is the easiest.

    Makes about 24 large cupcakes plus an 8x8" brownie pan. You can also make mini cupcakes, which need to bake about 15 minutes.
