Not a difficult cake to make, and the creme cheese icing makes it perfect!

Ingredients

  • CAKE
  • 2 cups flour
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 2 large eggs
  • 2 teaspoons baking powder
  • 20 ounces can of crushed pineapple-do not drain
  • CREAM CHEESE ICING
  • 8 ounces cream cheese
  • 1 stick softened margarine
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla

How To Make amish pineapple cake

  • Step 1
    Grease and flour 9" X 13" cake pan.
  • Step 2
    Preheat oven to 350.
  • Step 3
    In a large bowl, mix cake ingredients by hand.
  • Step 4
    Pour into greased & floured pan.
  • Step 5
    Bake for approximately 40-45 minutes until cake is golden brown on top.
  • Step 6
    When cake is cool, top with icing.
  • Step 7
    Icing--use electric mixer to mix all ingredients for icing and spread on cool cake.
  • Step 8
    Enjoy-but it's better on the 2nd or 3rd day.
