Ingredients

  • CAKE
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 can crushed pineapple, do not drain (20 oz)
  • CREAM CHEESE ICING
  • 8 ounces cream cheese, softened
  • 1 stick margarine, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract

How To Make amish pineapple cake

  • Step 1
    Grease and flour a 9" X 13" cake pan. Preheat oven to 350 degrees F. In a large bowl, mix the dry ingredients by hand: flour, baking soda, baking powder, and salt.
  • Step 2
    In another bowl, whisk together eggs, granulated sugar, and vanilla extract.
  • Step 3
    Add the wet ingredients to the flour mixture and stir until well blended.
  • Step 4
    Stir in the pineapple.
  • Step 5
    Pour into the greased baking dish.
  • Step 6
    Bake for approximately 40-45 minutes until the cake is golden brown on top. Let cool.
  • Step 7
    For the icing, use an electric mixer to mix all ingredients for the icing.
  • Step 8
    Mix until fluffy.
  • Step 9
    When the cake is cool, frost it with icing. Enjoy, but it's better on the 2nd or 3rd day.
