Not a difficult cake to make, and the creme cheese icing makes it perfect!

Ingredients

  • CAKE

  • 2 c
    flour
  • 2 c
    sugar
  • 2 tsp
    vanilla
  • 2 large
    eggs
  • 2 tsp
    baking powder
  • 20 oz
    can of crushed pineapple-do not drain
  • CREAM CHEESE ICING

  • 8 oz
    cream cheese
  • 1 stick
    softened margarine
  • 1 1/2 c
    powdered sugar
  • 1 tsp
    vanilla

How to Make Amish Pineapple Cake

Step-by-Step

  1. Grease and flour 9" X 13" cake pan.
  2. Preheat oven to 350.
  3. In a large bowl, mix cake ingredients by hand.
  4. Pour into greased & floured pan.
  5. Bake for approximately 40-45 minutes until cake is golden brown on top.
  6. When cake is cool, top with icing.
  7. Icing--use electric mixer to mix all ingredients for icing and spread on cool cake.
  8. Enjoy-but it's better on the 2nd or 3rd day.
