First time we had this was when we were at a Amish farm and we helpped them hand pick a feild of corn. They had two teams of horses and two wagons and we would husk the corn and throw it onto the wagon. When we had about a row left, the Amish dad told the little girl to have mom bake a cake, we'll be done soon. My daughter drove the oldest son to the store and they got a gallon of ice cream. Warm cake with ice cream dripping ,,,, it was AWESOME.

Ingredients
- 1 1/4 cups boiling water
- 1 cup quick cooking oats
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 1/3 cups flour
- 1 teaspoon baking powder
- 1 stick margarine
- 2 - egg
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- TOPPING
- 1/2 cup chopped nuts
- 1 cup brown sugar
- 1 stick margarine
- 1 cup coconut
- - sm. amount of milk
How To Make amish oatmeal-nut cake

Step 1Pour water over oats; let stand for 2 minutes. Do not drain. Cream oleo and sugar with oats. Add beaten eggs and dry ingredients. Bake in a greased 9X13 inch cake pan at 350 for 35 to 40 minutes. Mix topping all together; put on cake (while cake is still warm) and bake until topping is bubbling or light brown in color.
