This is a very moist and delicious carrot cake that I got from one of my many books on Amish cooking; it one of the best cakes you'll ever eat!

Ingredients

  • 3
    eggs
  • 2 c
    all-purpose flour, sifted
  • 2 c
    sugar
  • 1 1/4 c
    vegetable oil
  • 2 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1 1/8 tsp
    salt
  • 1 tsp
    vanilla extract
  • 1 c
    shredded coconut
  • 1 c
    walnuts, chopped
  • 1 c
    crushed pinnapple, drained
  • 1 c
    raw carrot, shredded

How to Make Amish Carrot Cake

Step-by-Step

  1. Preheat oven to 350 F.
  2. In a large mixing bowl, beat eggs; add the next seven ingredients and beat until smooth.
  3. Stir in the coconut, nuts, pinapple and carrots with a mixing spoon; pour into a greased 9- X 13-inch baking pan.
  4. Bake in preheated oven for 50 minutes.
  5. When cake has slightly cooled, spread with Cream Cheese Frosting (recipe follows).
