1Spray the inside of the slow cooker with non-stick cooking spray. Combine sugar,flour, crushed cookies, and baking powder in a mixing bowl.
Stir in milk, melted butter, Amaretto, and almond extract. Spread batter in the show cooker.
2Sprinkle brown sugar over the batter, then pour the boiling water over it.
3Cover and cook on High for 2 to 2 1/2 hours, or until a tooth pick inserted into the top layer come out clean.
Allow pudding to sit for 15 minutes with slow cooker turned off before serving.
Top with fresh whipped cream or Cool Whip.
