Here is an alternating icing/topping for my Oatmeal Cake.

Ingredients

  • 1/2 cup margarine
  • 1 cup brown sugar
  • 1 cup coconut
  • 1 cup chopped pecans
  • 1 can (8 ounces) crushed pineapple, juice also
  • 1 teaspoon lemon juice (not extract)

How To Make alternate oatmeal cake icing

  • Step 1
    Boil in saucepan until thickened. Spread over cake. Broil until golden brown.
  • Step 2
    NOTE: This makes enough for a 9 x 9 x 2 inch cake.
