Great for Easter!

I use semi-sweet chocolate chips instead of milk chocolate chips.

I also toasted almonds first before putting them on the coconut layer.

chocolate cake mix with pudding
1 c
evaporated milk
1 c

coconut, shredded
1-1/2 c
1 stick

whole almonds

How to Make Almond Joy Cake


  • 1Bake cake according to package directions. While cake is baking combine 1 cup evaporated milk and 1 cup of sugar in saucepan and bring to a boil. Remove from heat and stir in marshmallows until melted. Stir in coconut.
  • 2When cake is done, use a large fork to poke holes in cake. Spread coconut mixture on top of cake.
  • 3Combine 1/2 cup milk and 1-1/2 cup of sugar in saucepan. Bring to boil. Remove from head and add one stick of butter until melted. Add chocolate chips and stir until smooth.
  • 4Arrange almonds on top of coconut layer. Pour warm chocolate mixture over almond coconut layer.
