9×9 carrot cake
This is a good smaller carrot cake. I love toasted coconut on top but you can add nuts , raisins or coconut to the batter according to your family' s likes.

Ingredients
- 1 1/2 cups sifted flour
- 1/2 cup white sugar
- 1/2 cup brown sugar, lightly packed
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2/3 cup salad oil
- 1 cup carrots, grated
- 1/2 cup pineapple, crushed
- 1 teaspoon vanilla extract
- 2 eggs
How To Make 9×9 carrot cake

Step 1Mix the dry ingredients together.

Step 2Add the remaining ingredients. Mix 2 minutes.

Step 3Pour into a greased and floured cake pan.

Step 4Bake 35 minutes at 350 until a toothpick comes out clean.

Step 5Cool 10 minutes before removing from pan.

Step 6Frost with cream cheese frosting.
