This is a good smaller carrot cake. I love toasted coconut on top but you can add nuts , raisins or coconut to the batter according to your family' s likes.

Ingredients For 9×9 carrot cake

1 1/2 csifted flour

1/2 cwhite sugar

1/2 cbrown sugar, lightly packed

1 tspbaking soda

1 tspbaking powder

1 tspcinnamon

1/2 tspsalt

2/3 csalad oil

1 ccarrots, grated

1/2 cpineapple, crushed

1 tspvanilla extract

2eggs
How To Make 9×9 carrot cake

1Mix the dry ingredients together.

2Add the remaining ingredients. Mix 2 minutes.

3Pour into a greased and floured cake pan.

4Bake 35 minutes at 350 until a toothpick comes out clean.

5Cool 10 minutes before removing from pan.

6Frost with cream cheese frosting.
