9×9 carrot cake

This is a good smaller carrot cake. I love toasted coconut on top but you can add nuts , raisins or coconut to the batter according to your family' s likes.

Ingredients For 9×9 carrot cake

  • 1 1/2 c
    sifted flour
  • 1/2 c
    white sugar
  • 1/2 c
    brown sugar, lightly packed
  • 1 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 2/3 c
    salad oil
  • 1 c
    carrots, grated
  • 1/2 c
    pineapple, crushed
  • 1 tsp
    vanilla extract
  • 2
    eggs

How To Make 9×9 carrot cake

    Mix the dry ingredients together.
  • 2
    Add the remaining ingredients. Mix 2 minutes.

    Pour into a greased and floured cake pan.

    Bake 35 minutes at 350 until a toothpick comes out clean.
  • 5
    Cool 10 minutes before removing from pan.
  • 6
    Frost with cream cheese frosting.
