This was one of my Grandmother's Favorites. Good for late night snack with tea, or breakfast with jam. A light & moist cake.

Ingredients

  • 3 sticks parkay
  • 2 1/2 cups sugar
  • 6 - eggs
  • 3 cups flour
  • 3/4 cup 7up soda
  • 3 teaspoons lemon flavoring

How To Make 7up cake

  • Step 1
    Heat oven @ 325 (electric) 350 (Gas) Cream Parkay & sugar until smooth
  • Step 2
    Add one egg at a time (I usually beat them all together and add a little at a time), ensuring well blended. When all eggs are added batter will be funny looking
  • Step 3
    Gradually add flour, scraping sides of bowl. Let batter mix for 1 - 2mins.
  • Step 4
    In a separate bowl, mix Soda & lemon flavoring. Gradually add to mixture, the texture should be smooth.
  • Step 5
    Spray 3 sml loaf pans/2 lrge loaf pans pan with Pam Baking or grease and flour pans.
  • Step 6
    Cool for 15mins. remoe from pans.
