7 up pound cake
I found this recipe in "Kitchen Keepsakes" that a friend gave me for my birthday. I use a vanilla glaze instead of the Lemon glaze occasionally.

Ingredients
- 2 sticks margarine or butter
- 1/2 cup crisco
- 3 cups sugar
- 5 - eggs
- 3 cups flour
- 2 teaspoons vanilla
- 1 teaspoon lemon extract
- 3/4 cup 7 up
How To Make 7 up pound cake

Step 1Do not use cake flour or sift. Stir flour in cannister before measuring.

Step 2Cream margarine and Crisco.

Step 3Add sugar slowly

Step 4Add eggs one at a time, beating well after each addition.

Step 5Add other ingredients except 7 UP and mix well.

Step 6Slowly add 7 UP, mixing well.

Step 7Pour into greased and floured (or cooking spray with flour) Bundt pan and bake 1 hour and 10 to 20 minutes minutes at 350 degrees. Let cake sit until cool, then invert onto a cake plate. Drizzle glaze over cake. Freezes well.

Step 8Vanilla Glaze: 1 cup Powdered Sugar and 1 1/2 tablespoons milk or cream. Double recipe for extra glaze.

Step 9LEMON GLAZE: 1 cup Powdered Sugar and juice of 1 lemon ( 1 - 1 1/2 tbsps.) Double recipe for extra glaze.
