I found this recipe in "Kitchen Keepsakes" that a friend gave me for my birthday. I use a vanilla glaze instead of the Lemon glaze occasionally.

Ingredients

2 stick
margarine or butter
1/2 c
crisco
3 c
sugar
5
eggs
3 c
flour
2 tsp
vanilla
1 tsp
lemon extract
3/4 c
7 up

How to Make 7 UP Pound Cake

Step-by-Step

  • 1Do not use cake flour or sift. Stir flour in cannister before measuring.
  • 2Cream margarine and Crisco.
  • 3Add sugar slowly
  • 4Add eggs one at a time, beating well after each addition.
  • 5Add other ingredients except 7 UP and mix well.
  • 6Slowly add 7 UP, mixing well.
  • 7Pour into greased and floured (or cooking spray with flour) Bundt pan and bake 1 hour and 10 to 20 minutes minutes at 350 degrees. Let cake sit until cool, then invert onto a cake plate. Drizzle glaze over cake. Freezes well.
  • 8Vanilla Glaze: 1 cup Powdered Sugar and 1 1/2 tablespoons milk or cream. Double recipe for extra glaze.
  • 9LEMON GLAZE: 1 cup Powdered Sugar and juice of 1 lemon ( 1 - 1 1/2 tbsps.) Double recipe for extra glaze.
