7-up bundt cake
This is modified from a recipe that came with my Mom's Nordic Ware Bundt pan, around 1965. Can't find the recipe on the website, now.

Ingredients
- 1 1⁄2 cups butter
- 3 cups sugar
- 5 eggs
- 3 cups flour
- 2 tablespoons lemon extract
- 3⁄4 cup 7-up or 3/4 cup other carbonated lemon-lime beverage
- GLAZE
- 3-1/4 cups powdered sugar, 1 tsp. vanilla, 3 tbsp. lemon juice, 1/4 cup cold 7up or other lemon-lime soda
How To Make 7-up bundt cake

Step 1Cream sugar& butter together until light& fluffy.

Step 2Add eggs, one at a time, and beat well.

Step 3Add flour and mix in.

Step 4Beat in lemon extract and 7-UP.

Step 5Pour batter into well-greased and floured Bundt pan.

Step 6Bake at 325 degrees for 1 to 1-1/4 hours. Cool completely and, ice with glaze. Garnish with long"curls" of lemon zest.

Step 7To make glaze, combine the powdered sugar, vanilla, lemon juice, and 7UP®. Beat until smooth with hand mixer.
