Everyone that has ever tasted this cake ask me for recipe. It's a family favorite!

Ingredients

  • 3 cups all purpose flour
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1/2 cup pecans, in pieces
  • 1 1/3 cups oil
  • 4 - eggs
  • 2 cups raw carrots shredded
  • 3/4 cup crushed pineapple with syrup
  • 2 teaspoons vanilla
  • CREAM CHEESE FROSTING
  • 6 ounces cream cheese
  • 8 tablespoons butter, unsalted
  • 2 teaspoons vanilla
  • 2 dashes salt
  • 1 cup chopped pecans
  • 5 cups powder sugar

How To Make 4 layer pineapple carrot cake w/ cream cheese frosting

  • Step 1
    In large mixer bowl stir together dry ingredients; add oil,eggs, carrots, pineapple, and vanilla. Mix till all ingredients are moistened. Beat with electric mixer 2 minutes at mediom speed. Pour batter into 4 greased and lightly floured 9inch round pans. Bake in 350* oven about 25 minutes; cool. Frost with Cream Cheese Frosting.
  • Step 2
    Frosting--Soften cream cheese and butter. Beat in vanilla and salt. Gradually add powder sugar; blend well, Stir in pecans. Frost cake in layers.
