1-2-3 mayonnaise cake

My mother told me this cake started during the depression era - no eggs or shortening needed because they are in the mayonnaise. She made this cake for my birthday - always a 5 layer cake for birthdays with Fudge Frosting! I'm 70 now, and I still want this cake for 'my day' but a 2 layer or sheet cake is just fine.

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 cup warm water
  • 3 tablespoons hershey's cocoa
  • 2 teaspoons baking soda
  • 1 cup mayonnaise

How To Make 1-2-3 mayonnaise cake

  • Step 1
    Preheat oven to 350
  • Step 2
    Grease and 'lightly flour' (using cocoa instead of flour) 2 - 8" cake pans - or 12" x 9" pan
  • Step 3
    Put soda and cocoa in small bowl then add warm water to dissolve - stir
  • Step 4
    Put Flour, Sugar, and mayo in larger bowl - then add dissolved cocoa mixture - mix well (can use hand mixer). Pour into baking pans.
  • Step 5
    Bake for about 30 mins - test by lightly pressing centr of top with a finger - should bounce right back.
  • Step 6
    Frost with your favorite frosting - either fudge or regular chocolate seems the best, in my humble opinion. and Enjoy!
