Ingredients
- Crust:
- 3/4 C. corn meal
- 1/3 C. butter
- 1/2 tsp. salt
- 4 Tbs. water
- 1/2 C. flour
- Filling:
- 1 lb. ground beef
- 1/2 C. onion, chopped
- one 1-lb. can tomatoes and juice
- 1 Tbs. chili powder
- 1/2 tsp. cumin
- dash of pepper
- 2 eggs
- 1 Tbs. cornstarch
- 3/4 C. sharp cheddar cheese, shredded

Step 1Mix crust ingredients and roll out crust to fit a 9-inch pie pan. Chill in refrigerator.

Step 2Brown beef and onion, then pour off fat. Drain tomatoes, reserving juice. Add tomatoes and spices to meat. Mix tomato juice, eggs, and cornstarch. Cook until thickened and combine with meat mixture.

Step 3Pour into crust and top with cheese. Bake at 400 degrees for 25 minutes. Cool 5 minutes before cutting.
