1 1/4 c. heavy cream (plus more if needed)
1 1/2 pounds russet potatoes (peeled and sliced 1/8-inch thick)
3/4 c. provolone cheese (grated)
1/2 c. Parmesan cheese (grated)
2 c. cheddar cheese (grated)
Fresh parsley (chopped, for garnish)
1 1/2 tsp salt
1/2 tsp freshly ground black pepper
