*Note, I have modified this recipe to make it more "corn casserole" than corn bread. If I am serving with a Mexican dinner, I add diced jalapenos rather than green onions and add 1 cup of finely grated cheese (Link to original recipe in instructions)

1/2 cup (1 stick) unsalted butter, melted, plus additional for coating pan

2 cup fresh corn kernels (from 2 ears of corn)*
•
2 15-ounce can cream-style corn*
•
1 1/2 cup sour cream*

1 8-ounce package corn muffin mix

6 tablespoons thinly sliced green onions
•
1/4 teaspoon freshly ground black pepper
