2 oz. chocolate (milk or dark), chopped (I just use a regular Hershey's chocolate bar)

1 cup unsweetened Dutch processed cocoa powder
•
1 tsp. instant espresso powder
•
1 3/4 cups boiling water
•
Dry Ingredients:
•
2 3/4 cups all purpose flour
•
1 1/4 tsp. baking soda
•
1/2 tsp. regular table salt
•
1/4 tsp. baking powder
•
1/4 tsp. cinnamon
•
Wet Ingredients:
•
1 cup sugar
•
1 cup (packed) light brown sugar
•
1 tsp. molasses
•
1 1/3 cups regular heavy mayonnaise such as Hellmann's or Duke's (*do not use reduced-fat or fat-free)
•
2 extra-large eggs
•
2 tsp. vanilla extract
