INGREDIENTS
List of ingredients (2 servings)
Main ingredients
200 g of fresh curly and twisted Chinese noodles
80-100 g red-smoked pork meat (home-smoker, red food coloring, soy sauce and sugar. Use a good piece of pork meat and slice of 80-100 g of meat to serve with the noodles)
40-60 g spinach
a few slices of menma (preserved bamboo shoots)
2 slices of kamaboko, preferably with a swirl (unfortunately I can't get it here)
2 pieces of nori
1 scallion
Soup ingredients
1 chicken carcass
1 pork ribs (optional)
½ inch of ginger
1 scallion
1/4 liter ichiban-dashi
2 shiitake
3 white pepper corns
1 bay leave
1 tbs of sake
1 tbs of dark soy sauce
1 large tbs of Chinese chacha sauce (also known as sacha sauce, a fermented paste from ginger, garlic, brill fish, dried shrimps, chili and soy bean oil primarily used in Fujian cuisine (china)).
