stir-fried pork belly with kimchi

A Korean recipe from one of my Food & Wine cookbooks. This is quick and easy. It's great served over steamed rice. Enjoy!

Ingredients
- 1 tablespoon vegetable oil
- 3/4 pound thinly sliced fresh pork belly, cut into 2-inch strips
- 3/4 pound kimchi
- 1 1/2 tablespoons soy sauce
- 1/4 teaspoon asian sesame oil
- 1 scallion, top 2 inches trimmed, very thinly sliced
How To Make stir-fried pork belly with kimchi

Step 1In a large skillet, heat the veggie oil until shimmering. Add the thinly sliced pork belly to the skillet in a single layer and cook over high heat, turning the slices once, until crisp, 6 minutes. Transfer the fried pork slices to a paper towel-lined plate to drain and pour off all but 2 tablespoons of the fat from the skillet.

Step 2Add the kimchi to the skillet and stir-fry over high heat for 2 minutes. Return the drained pork to the skillet and toss to combine with the kimchi. Stir in soy sauce and transfer to a large serving bowl. Drizzle the stir-fry with the sesame oil and garnish with the sliced scallion.
