8 cups packed baby spinach
2 tsp fresh lemon juice
2 carrots, thinly sliced into rounds, optional
1/2 head purple cabbage, shredded, optional
1/2 cup raw unsalted cashews, chopped, optional
Curry Sauce
1 cup full-fat coconut milk
1 tbsp Thai red curry paste
1 tsp curry powder
1/2 tsp ground cumin
