preheat oven to 350 degrees F.

1 lb. lean ground beef, bison or turkey

1 lb. curly pasta (cellentani, fusilli or rotini)
•
1 (15 oz.) can pinto beans drained and rinsed well
•
1 (28 oz.) can whole tomatoes in sauce (undrained)
•
1 (15 oz.) can petite diced tomatoes, (undrained)
•
1 cup dry red or white wine
•
3 Tablespoons chili powder
•
1 Tablespoon smoked paprika anddry Italian seasoning
•
1 teaspoon cumin
•
2 teaspoons freshly ground black pepper
•
1 teaspoon Lawry’s Seasoned Salt
•
3 Tablespoons olive oil
•
1 large onion, chopped
•
1/2 green bell pepper, chopped
•
1/2 yellow bell pepper, chopped
•
2 large carrots, chopped into little cubes
•
2 large cloves garlic, minced
•
10 oz. block of sharp cheddar cheese, shredded
•
about 1 cup of shredded Parmesan cheese
