"Because I love Cubano sandwiches, I decided to switch the ingredients up and turn them into a spicy meatloaf with pork instead of a traditional beef meatloaf. The Swiss cheese and ham filling is such a nice surprise...."

INGREDIENTS
8 oz.- Linguica sausage (fully cooked Portuguese style sausage) cut into 1” chunks
½ - medium, yellow onion /rough chopped
½ - sweet red bell pepper/ stem & seeds removed & rough chopped
4- cloves garlic/ peeled
2 TBS- orange juice
1 large- egg
¼ cup- evaporated milk
2 TBS- cumin
2 TBS-light brown sugar/ lightly packed
1 TBS- chili powder
1 TBS- smoked sweet paprika
2 TBS- Worcestershire sauce
2 tsp- Kosher salt
2 tsp- black pepper
1&1/3 cups - Panko (Japanese style bread crumbs)
2 lbs- ground pork
6 Slices - Swiss cheese/ square, sandwich cut
½ lb - ¼” thick, deli-ham slices
½ cup- honey Dijon mustard
