INGREDIENTS

4 eggs
•
1 and 1/2 cup milk, cream, unsweetened soy or almond milk, or a combination (I use mostly almond milk with a little cream)

6 ounces or so smoked salmon
•
1 large leek, white and light green parts, sliced - remove the tough dark green parts (should be about 1 cup of 1/4" slices)
•
1 small red pepper, chopped (about half a cup)
•
4 oz raw mushrooms (wild or shitake are nice for this, but any will do)
•
3/4 cup shredded cheese - almost any kind or combo is fine, but not too much strong-flavored cheese. I used a mild Swiss.
•
1 teaspoon dry mustard
•
1/2 teaspoon thyme
•
pinch of cayenne pepper or a bit of hot sauce
•
paprika, salt, and pepper
