Ingredients: 2 Tbsp unsalted butter; 1 Tbsp olive oil; Scant 1/2 c unbleached all purpose flour; 2 c milk, (at room temperature); ¼ lb ham, (diced into small pieces); Pinch nutmeg; Salt ((to taste -- only needed if your ham isn’t too salty)); 1 egg, (lightly beaten); ½ - ¾ c bread crumbs; Oil for frying
