4 carrots, chopped (peel if desired)

1/4 cup + 2 tablespoons brown sugar, divided
•
1 1/2 cups pomegranate juice
•
1/3 cup soy sauce
•
1 tablespoon fresh thyme
•
1 tablespoon fresh rosemary
•
1/4 teaspoon cayenne pepper
•
1/4 cup fresh parsley

1 cup polenta (I used Bob's Red Mill)
