2/3 pound lean stewing beef
2 cups chopped sweet potato
1 clove garlic, crushed
1 medium onion, roughly chopped
8 ounces button mushrooms, halved
2 stalks celery, sliced
2 medium carrots, sliced
1 15 ounce can reduced sodium black beans, drained and rinsed
2 bay leaves
1 cup good red wine
2 tbsp tomato paste
1 8 ounce can no-salt added tomato sauce
1 tsp dried thyme
1 tsp dried oregano
