INGREDIENTS

1.5 lbs boneless, skinless chicken breast (don't need to be cooked)

1.5 cups carrots (can use baby carrots or chop and peel large carrots)

1 yellow onion, chopped
•
3-4 stalks of celery, chopped
•
4 garlic cloves, minced
•
3 tablespoons extra virgin olive oil
•
1/2 teaspoon dried thyme
•
1 bay leaf
•
3 tablespoons fresh parsley
•
6 cup of chicken broth
•
1 cup water
•
1/2 package egg noodles (more if you want your soup to have a lot of noodles)
