5 pound brisket, prepped (most of fat removed)

2 onions, cut into 1/8ths
•
4 cloves garlic, crushed
•
1/2 cup water
•
For the dry rub
•
4 teaspoons chile powder
•
2 teaspoons salt (I used sea salt)
•
2 teaspoons granulated onion or onion powder
•
2 teaspoons cumin
•
1 teaspoon chipotle chile powder
•
1 teaspoon ground coriander
•
1 teaspoon granulated garlic or garlic powder
•
1 teaspoon crushed Mexican oregano
