1 medium red onion, (diced)
1 tbsp olive oil
3 cloves garlic, (minced)
1 jalapeno*, (diced)
½ cup corn, (frozen, thawed)
1 bell pepper, (diced)
1 tablespoon tomato paste
1 15 oz. can black beans, (no salt added)
½-1 teaspoon sea salt
1 medium avocado
1 cup cilantro
1 clove garlic
⅓ cup non-fat greek yogurt
½ teaspoon salt; adjust to your taste
¼ teaspoon black pepper
⅓ cup water; add more to adjust to your preferred consistency*
